Famous Myrtle Beach Peach Martini

Oh my! this drink is truly heaven,  Power up your pucker and get ready for this decadent peach martini. This cocktail is truly heavenly. It’s no wonder it’s a smashing hit at the Aspen Grill. The sparkling white wine in this drink lends a fizz on your tongue upon first sip. After a few more sips, the flavors melt on into your mouth creating a luscious, peachy warmth. For a refreshing and bubbly martini that reminds you of summer—this is it.

Serves 1

1/2 peach, peeled, sliced

Cracked ice

3 Tbs. Skyy vodka

1 Tbs. peach schanapps

2 Tbs.sparkling white wine use prosecco

Slice peach and mint, optional

In a cocktail shaker, mash or muddle 1/2 peach. Add ice, vodka and schnapps,stir..Strain into chilled martini glass; top of with wine.garnish with peach and mint serves 1.

Chicken Parmesan Crock pot



2-4  free range boneless, skinless chicken breast halves
1/2 cup Italian Seasoned Bread Crumbs
1/4 cup Parmesan Cheese
1/4 t black pepper
1/4 t kosher salt
1 TBSP  Greek olive oil
1 egg, beaten
sliced or shredded mozzarella cheese
organic  jarred marinara sauce
Spread the 1 TBSP of olive oil into the bottom of your crockpot.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.
Close lid and cook on low for 5-6 hours or high for 3.
Serve with your favorite pasta.
This is a succulent and delightful meal made easy in a crock pot. What a flavorful feast with the flavors of black pepper, olive oil, mozzarella cheese and marinara sauce. Being that the meat simmers in the crockpot, you can expect tender, soft meat that melts in your mouth along with the sauce and delicious cheese in this Italian recipe. Your guests will love this and indulge in this scrumptious meal. Even though this is a hearty meal, cook enough, because you will most likely serve a few helpings. Yummy.

Chicken Spaghetti

Perfect for a Potluck, Party or even as a Side Dish


 Potlucks are a great way to enjoy a variety of foods and socialize with friends. I haven’t been to this type of party in a while, but went to one recently. Thankfully, I had this recipe for Chicken Spaghetti which works perfectly for this occasion. To my surprise, this dish was a big hit and guests gobbled up the meal quickly. This is actually a simple dish to make and I was happy it was so well received. This delightful peppery, cheesy dish melts in your mouth and is a great meal for a potluck party. Enjoy.
Makes 8 servings 

2 c. cooked chopped chicken
8 oz. pkg. spaghetti uncooked and broken into 2- inch pieces
1 c. celery, chopped
1 c. onion, chopped
1 c. yellow pepper, chopped
1 c. red pepper, chopped
2 10  oz. cans cream of mushroom soup
1 c.chicken broth
1/4 t. Cajun seasoning or pepper
1-2 c. shredded cheddar cheese



Mix... chicken, spaghetti, celery, onion, yellow and red peppers in a bowl.

Whisk... together soup, broth and seasoning in a separate bowl. Add chicken mixture to soup mixture. Spread the mixture into a lightly greased 13'x 9' baking pan, sprinkle cheese over top. Cover with aluminum foil coated with non-stick vegetable spray.

Bake...at 350 degrees for 45 minutes. uncover and bake for 10 more minutes.

Peanut Butter and Jelly

Fun Food For The kids

Recently I did a favor for a very good friend,  She asked me to watch her  2 children Sidney and Molly, while she attended some afternoon event. Her sitter canceled at the last minute, and she needed  help so I agreed, I  have always love her kids so it wasn't any big deal.  But being single with no children myself I had very little food in the house that the kids would really enjoy. I did have peanut butter and some jelly, but no bread, except for some hot dog buns. Well the kids love this sandwich, and had so much fun eating this sandwich,.It was all they talked about when their mother arrived  to pick them up. Who knew!

So easy,  just spread peanut butter on the hot dog buns
 place a peeled banana  on the bun as you would a hot dog. fold the bun and then drizzle your strawberry jelly over the banana and sprinkle a few crushed peanuts over the top

I have made this again and again for my self as well as for my adult friends, and everyone loves the idea. Seem  a peanut butter , banana, and jelly sandwich taste even better when  made to look like a hot dog.

Pork Chops Cacciatore

Crock Pot "Hunter's Style"


This dish is truly divine,  very refine taste with the using of the dry white wine.The jalapeno pepper gives the dish a slightly spicy favor. Cacciatore refers to hearty stew-like dishes, usually prepared with onions, tomatoes, mushrooms, wine and peppers  ingredients an Italian hunter might have in he's pack. Cacciatore is in fact,  Italian meaning "hunter style" This dish is perfect served over rice. My dinner  guests really loved this tasty flavorful recipe, and I am sure you well too.


Preparation time: 25 minutes
Cooking time:  low 8-9 hours
Yield : 4 servings


2 tablespoons olive oil
4 medium bone in pork chops ( remove fat)
   1 large onion coarsely chopped
   2 cloves garlic sliced very thin
1/2 cup dry white wine
 1 jalapeno pepper seeded and coarsely chopped
10-ounce white mushrooms, washed and sliced thin
 2 cups canned crushed tomatoes
1 teaspoon salt
1/4 teaspoon ground black pepper
    1 tablespoon minced parsley 
  
1. Lightly spray a 6-quart slow cooker with vegetable oil cooking spray.
2. Heat the olive oil in a large nonstick skillet over medium- high heat. Brown pork chops, onion, and garlic.Place the browned chops in the slow cooker. Add the wine to the skillet, bring to a simmer, and scrape off any brown particles. Pour over chicken in the slow cooker. 
3 Add the jalapeno pepper,mushrooms, wine, tomatoes,salt and pepper to slow cooker.
4 Cover and cook on low for 8-9 hours or until pork chops are tender, sprinkle with the parsley before serving.
Enjoy!

Short Rib Dinner, Crock Pot Cooking

A Royal Fest!

This recipe is a great one for all the meat lovers, as it's a delicious  hearty meal. The meat is so juicy, moist  and tender. No meat lover could even think about resisting this meal. Its a royal  meal, fit for a king! 

Servings: 6
Prep Time: 20 min
Cook Time: 12 hrs
Difficulty: Easy

Ingredients :

3 pounds beef short ribs
1 envelope Lipton onion soup
1 teaspoon salt
1 teaspoon pepper
1 tablespoon garlic powder
48 oz. Beef stock
5 ribs celery, cut into 2 inch pieces
5 large carrots, peeled and sliced in 2 inch pieces
8 red potatoes, quartered
1 large onion, cut into 8 pieces
Salt and Pepper to taste
1 tablespoon cornstarch
Loaf or crusty bread (optional)

Directions

Rub the outside of the short ribs with salt, pepper and garlic powder. In a large skillet over high heat, brown short ribs on all sides. Transfer ribs to a slow cooker making sure you get all the juice and brown bits from skillet.  Add the chicken stock, cover and cook on low for 8 hours. Add potatoes, carrots, onions and celery. Continue cooking on low for 4-6 hours. Salt and pepper to taste. Before serving, remove one cup of liquid from slow cooker and whisk in cornstarch. Add mixture back to cooker and stir. Serve in bowls with a thick slice of crusty bread.
